  Ingredients     

  4 large ripe mangos
  6 cups low fat vanilla yogurt
  12 tablespoons low fat granola
  Mango Yogurt Parfait


Instructions

Puree 2 mangos and spoon equal amounts into 12 clear plastic cups. Top each with 1/4 cup yogurt. Spoon cubed mango over the top, saving a few pieces for garnish. Top with remaining 1/4 cup yogurt and reserved mango. (Recipe may be made ahead at this point. Cover and refrigerate until ready to serve.) Top each serving with a tablesp  oon of granola just before serving.

Mango Bread

Ingredients   

1/4 cup butter
3/4 cup sugar
2 medium very ripe, soft mangos, peeled and pitted (1 1/2 mangos pureed and 1/2 mango diced)
1 large egg, slightly beaten
1 teaspoon pure vanilla extract
2 tablespoons lime juice
1 1/2 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 cup chopped walnuts

 

 Instructions

To prepare batter, in a large mixing bowl cream the butter and sugar. Add the mango puree, egg, vanilla, and lime juice.

In a separate bowl, combine the flour, baking powder, baking soda and cinnamon. Add the mango mixture to the flour mixture, stirring until the dry ingredient is just moistened. Stir in the walnuts and diced mango.

To bake the mango bread, preheat the oven to 350°F. Coat a 9x5x3 inch pan with cooking spray. Pour the batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before removing from the loaf pan. Allow to cool for 1 hour on a rack before serving.

Summer is here and it's time to think of ways to beat the heat. Summer is also the time when we get delicious mangoes in India. As we get good varieties of mangoes this season, I decided to start the summer special with this refreshing homemade mango ice cream. This recipe is from a  free booklet written by the famous cook Chellam, that came along with a magazine. I love this recipe as the ice cream is very creamy and does not have crystals in it. So today we will learn how to prepare homemade mango ice cream following this easy, no cook recipe.

How to make Mango Ice cream


Cook time- Nil
Prep time - under 20 mins

Ingredients needed


Mango pulp - 1 cup
Milk Powder - 1 cup (full fat / full cream milk powder)
Water - 2 cups
Sugar - 1 cup
Fresh dairy cream - 1 cup
Mango essence - 1 tsp
Yellow food color - 2 drops (I did not use it)
GMS - 1/2 tsp
Milk -1/2 cup
Ice cream stabilizer (CMC) - 1 tsp

Preparation

Keep refrigerator settings to maximum.

Blend mango pieces in a blender and take 1 cup of mango puree.

Mix GMS with 1/2 cup milk.

Mix stabilizer with 1 tsp sugar.

Now add stabilizer + sugar mix to the GMS + milk, little by little stirring continuously with a spoon or fork.The mixture will become slightly thick. Keep it aside.

Method

Mix water with milk powder well without any lumps.

Add mango puree, essence, food color, sugar and cream to the above and mix well.

Then add GMS and stabilizer mix. Mix everything together well and keep it in the freezer.

Use only aluminium container with a lid for freezing the ice cream mix.( this is done to prevent crystal formation and to get a good texture)

Once it is half set, take it out from the freezer and beat it with a wooden ladle (do not use mixie). 

Beat it at least 4 times with a gap of 1 hour for 5 minutes.

After it is set, enjoy delicious mango ice cream.

Mango Juice Recipe – Ingredients

Fresh Ripe Mango – 2 big( I used banganapalli variety) comes to 2 cups when chopped
Sugar – 2 tbsp
Water – 1 cup
Icecubes – few

 

How to make mango juice

    Wash the mangoes, remove the skin and chop them into cubes. Add it to a mixer/blender along with sugar and icecubes, add water and blend it to a smooth juice.
    - Step1
    Strain and discard the leftover pulp(this step is purely optional). Add water if you want to dilute more or add icecubes as I did and serve chilled.
  - Step2
Serve chilled with icecubes, enjoy your homemade maaza!
Mango Juice Recipe

Notes:

    Adding icecubes will dilute the juice more so adjust water lever accordingly.
    You can skip sugar and add honey instead too.
    You can choose any variety of mango of your choice that is suitable for juice.
    Adjust sugar level according to the sweetness of mango.

 Mangoes are one of the most popular fruit in the world. Now coming to the facts... Scientific name of mangoes is  "Mangifera Indica". 





Mangoes were first grown in India over 5000 years ago which makes it our one of the oldest delicacies while, it has also travelled with

humans in the vey begining around 300 or 400 AD.

        Kesar Mangoes are considered to be one of the best mangoes, which are famous for its fruit quality, attractiveness fruit and pulp color,

taste, and good shelf life. It is widely grown in the Gujarat state of India. Kesar is characterised by its golden color with green overtones.It is

smaller than the other mangoes but its unique taste of sweetness is worth relishing due to which it is considered as "Queen of Mangoes".

Raw Mango Rasam



Mangoes are juicy stone fruit (drupe) from numerous species of tropical trees belonging to the flowering plant genus Mangifera, cultivated 


Ingredients :

20 gms tomato
5 gms arhar dal
50 gms raw mango
2 gms salt
15 gms curry leaves
1 dry red chilli whole
1 gm black peppercorns
1 gm coriander seeds
1 gm cumin seeds
2 gm ginger
2 gm garlic
1 gm mustard seeds
1 tsp turmeric powder
1 tsp oil

Method :

Roast black pepper, whole coriander seeds and cumin seeds. Grind them together. This is the rasam powder.  Boil raw mangoes in water.

When the mango is cooked, squeeze out the pulp. This will be the raw mango puree.  Boil the arhar dal.  Boil tomatoes with ginger, garlic

and rasam powder, strain it. Add raw mango puree and boiled arhar dal to it.  Pour oil into the wok, add mustard, whole dry red chilli, curry

leaves and turmeric powder and then pour it into the tomato mixture.  Add salt to it. Mix.  Serve.
